The most frequently asked question when talking about healthy food: "Do I have to eat salads every day to be healthy?!" My answer: "Absolutely ...!"

A salad is often seen as boring and monotonous. Nowadays, there are so many kitchen utensils making "special" salads easier and more attractive. It's not compulsory to have leaf lettuce when having a salad. You just can eat other kind of veggies instead. Such as veggie spirals.

I make this salad regularly just before I have to go to work. It's easy, fast to make and refreshing. The combination of the freshness of the cucumber, the lukewarm mince and the pronounced touch of the ginger gives me back that energy boost for the rest of my day.

Ingredients (1 serving)

  • 3 small carrots
  • 1/2 cucumber
  • 5 pitted black olives
  • 1 shallot
  • approx. 6 mushrooms
  • 3 tbsp extra virgin olive oil
  • 1 tsp ground cumin
  • 5gr fresh ginger
  • handful fresh parsley
  • 1 tbsp roasted pumpkin and sesame seeds
  • 1 tbsp brown rice vinegar
  • 1 tbsp walnut oil


Make spirals of the cucumber and carrots with a spiral slicer.
Place the veggie spirals in a deeper plate and add the rice vinegar, salt and pepper. Let it rest. In the meantime prepare the veggie mince.
Chop the shallot, mushrooms and ginger. Heat 2 tablespoons of olive oil in a pan and add the shallot, mushrooms and ginger. Fry them briefly and add the veggie mince to it.
Add an extra tablespoon of olive oil, ground cumin seeds and continue frying while stirring.
Roast the pumpkin and sesame seeds (without oil) in a separate pan.
Add half of the prepared veggie mince on top of the veggie spirals. Garnish with the black olives, fresh parsley, roasted seeds and a tablespoon of walnut oil.

Good to know

Not a big fan of veggie mince? Use lean chicken or beef mince instead.

Do you prefer your complete dish a bit warmer? Just fry the veggie spirals in a wok or in a microwave during 2 - 3 min.

I'm only using half of the prepared veggie mince and store the rest of it in a food container.
