Banana Oat Cookies

Sometimes (often) I’m in that kind of mood where I want something sweet but not to sweet, something little but filling, something fruity but not cherry, and most of all I want something healthy. My banana oat cookies are full of goodness and are just the perfect match with my coffee.

Ingredients (approx. 8 cookies)

  • 2 bananas
  • 120gr oats
  • 1 tbsp chopped dates (5 - 6 pitted dates)
  • 10 chopped hazelnuts
  • 1 tbsp shredded coconut
  • 1 tsp vanilla


Preheat your oven to 180°C.
Bring the oats, dates, hazelnut, coconut and vanilla together in a bowl.
Smash the bananas with a fork.
Add the bananas to the dry ingredients.
Mix everything together while still smashing the banana.
Bake for 15 – 20 minutes.

Good to know

You can add other ingredients such as dried figs, walnuts, cashew nut, cranberries, raisins or even raw cacao powder or raw cacao nibs.

You can keep them in the fridge up to 4 days.
